• 4-5 medium russet potatoes, washed, skin on
  • 1 medium yellow onion
  • 2 eggs
  • 1/2 cup matzo meal
  • salt + pepper


Grate the potatoes and onion. squeeze in a nut milk bag or something to get as much of the liquid out as possible. dump into bowl, mix with eggs, salt, pepper and then the matzo meal. hand form small patties and put in pan with a good layer of hot oil until brown.
