South of the Border Quiche
From Wake Up and Smell the Coffee, a collection of recipes from Pacific Northwest Bed and Breakfast Inns. A crustless quiche loaded with eggs, cheese, and green chilies.
Ingredients
- 8 eggs
- ¼ cup flour
- 1 tsp baking powder
- ½ pound Monterey Jack cheese, grated (2 cups)
- ½ cup cottage cheese
- ¼ cup butter or margarine, melted
- 1 (4 oz.) can green chili peppers, diced
- Salsa
- Sour cream
Instructions

Beat the eggs, then add flour and baking powder. Fold in cheeses and mix well. Stir in melted butter and chilis.

Pour mixture into a greased quiche pan. Bake in a preheated oven at 350 degrees for 35 minutes. Cool for 10 minutes.

Serve with sour cream and salsa.
