Ingredients

  • 8 eggs
  • ¼ cup flour
  • 1 tsp baking powder
  • ½ pound Monterey Jack cheese, grated (2 cups)
  • ½ cup cottage cheese
  • ¼ cup butter or margarine, melted
  • 1 (4 oz.) can green chili peppers, diced
  • Salsa
  • Sour cream

Instructions

  1. Beat the eggs, then add flour and baking powder. Fold in cheeses and mix well. Stir in melted butter and chilis.

  2. Pour mixture into a greased quiche pan. Bake in a preheated oven at 350 degrees for 35 minutes. Cool for 10 minutes.

  3. Serve with sour cream and salsa.
