• 4 or 5 poblano peppers
  • package of mushrooms
  • 2 sweet potatoes
  • can of diced tomatoes
  • cheese
  • green onion
  • cilantro
  • lime
  • salt
  • olive oil
  • cumin
  • chili powder
  • garlic


  1. Pre-heat oven to 400
  2. Skin and dice the sweet potato
  3. Cut up mushrooms
  4. Open up and flatten out the poblanos (throw away the core)
  5. Put the vegetables on a pan, put on olive oil, bake for 30 minutes or so
  6. When the vegetables come out, remove the skin from the poblano if you can
  7. Put everything in a pan a on the stove with the tomatoes, green onion, cilantro for a couple of minutes
  8. Add the tomatoes and let them cook off for a few minutes
  9. Add the cheese and lime and any more spices you like
  10. Serve with rice and beans
