Ingredients
- 4 or 5 poblano peppers
- package of mushrooms
- 2 sweet potatoes
- can of diced tomatoes
- cheese
- green onion
- cilantro
- lime
- salt
- olive oil
- cumin
- chili powder
- garlic
Directions
- Pre-heat oven to 400
- Skin and dice the sweet potato
- Cut up mushrooms
- Open up and flatten out the poblanos (throw away the core)
- Put the vegetables on a pan, put on olive oil, bake for 30 minutes or so
- When the vegetables come out, remove the skin from the poblano if you can
- Put everything in a pan a on the stove with the tomatoes, green onion, cilantro for a couple of minutes
- Add the tomatoes and let them cook off for a few minutes
- Add the cheese and lime and any more spices you like
- Serve with rice and beans
